The Valrhona Patisserie Championship 2023
VALRHONA AND ODAIOS FOODS ARE DELIGHTED TO ANNOUNCE THE LAUNCH OF THE 7th VALRHONA PÂTISSERIE CHAMPIONSHIP - #VALRHONACHAMP2023. THIS COMPETITION ASPIRES TO PROMOTE AND ADVANCE THE STANDARDS OF PASTRY IN THE NEXT GENERATION OF PASTRY CHEFS ACROSS IRELAND.
'RESPONSIBLE INDULGENCE'
This year we want you to create a plated restaurant dessert using ‘Responsible Indulgence’ as your theme. You must use at least one couverture from Valrhona’s Grand Cru range, and you can use any other Valrhona products desired. The objective is to be responsible, indulgent, and smart considering current trends regarding calories, E numbers and traceability.
The second creation is your interpretation of a boutique snacking plant-based dessert (2-3 bites) served before the plated dessert. It should contain these elements: a baked component with fruity, and creamy textures, finished with a chocolate decoration. The main couverture to be used should be Brazilian in origin: Itakuja 55% or Macae 62%. This is to be served on a presentation piece created out of chocolate.

THE WINNER WILL RECEIVE
A stage in L’Ecole Valrhona, France, including meals, accommodation, and flights, as well as the book Reasoned Gourmandise by Frederic Bau.

Entrants must put forward an original recipe under the theme ‘Responsible Indulgence’. The competition is open to all pastry professionals and catering students across the island of Ireland. Previous winners and individuals currently working for the organising companies may not enter. Island of Ireland only.
