Odaios Tented Food Exhibition 2013
2 Days to Remember - on the 20/21 May 2013, the second Odaios Tented Food Exhibition took place once again bringing together a unique gathering of food professionals to Fitzwilliam Square. The sun came out, the bunting blew and the Odaios Gastronauts entertained the crowds with food samples throughout the day. From our vintage Citroën van serving wood fired pizzas, the spit roast pig, Kettyle meats on the BBQ, cassoulet on the camp-fire to foie gras and French sausages on our plancha grill.
12 Giant Tipis - 11,000 square feet were filled with meat, charcuterie, fruit and vegetables, bread, pastry, chocolate, coffee, cake, ice-cream and all things gastronomic. Attendees met with our producers, growers, master carvers, bakers, coffee roasters and other chefs to get a taste of what’s cooking in 2013. Over 50 of our producers showcased a vast range of their food and drink spread out across our tipi village.
Kettyle Irish Foods, the masters of dry age maturation, presented new cuts and ranges to appeal to the needs of a variety of operators from bistros and banqueting, to cafes and fine dining.
Valrhona, the great chocolate pioneers, launched a world first - Dulcey ‘Blond’ Chocolate and talked professionals through the techniques and tips needed to develop their pastry skills, optimise their profit and delight their customers with the finest of chocolate.
In the Learning Lounge - our pop-up culinary environment for chefs and hospitality operators – guest speakers, including Kevin Thornton, Maurice Kettyle and Andrew Gravett, appeared on the hour. Interactive discussions ranged from Valrhona, the Irish Way with Darren Hogarty from Chapter One, Food for Life with Kevin Thornton, Smart Coffee Brewing Techniques with master coffee sourcer Jeremy Torz, a Black Pig carving demonstration with Spanish master carver Jose Luis to Wild Irish Food presented by Evan Doyle of Brooklodge and a margarita tasting from Cornish Sea Salt!
